In 2010, an Austin native set out to create a dining experience that was uniquely Texan, deeply local, and entirely farm-to-table. That chef was Bryce Gilmore, and his creation is Barley Swine, located at 6555 Burnet Road. From the very beginning, Gilmore wanted to build a restaurant that did more than just serve great food, as he wanted to champion regional farmers and ranchers.
Over the years, Barley Swine has earned a prestigious Michelin Guide rating for its inventiveness and dedication to local sourcing. The menu changes constantly to reflect what is fresh and in season, showcasing the rich agricultural landscape of Central Texas. It is fine dining, but with a relaxed, welcoming Texas attitude.
