Founded in 2014, Pinewood Coffee Bar is a hybrid establishment that operates as a coffee roaster, coffee bar, and public house. After starting as a roaster and opening their first coffee bar inside Alpha Omega in downtown Waco in 2016, they moved to their flagship shop on Austin Avenue in 2017. The establishment is widely recognized for its commitment to specialty coffee, having been included in Food & Wine's 2019 list of the best coffee shops in America. At the coffee bar, visitors can enjoy a menu of traditional coffee and espresso drinks, tea, and curated snacks, enhanced by seasonal housemade syrups. They offer a variety of coffees from around the world, including the Rover Blend—a 50/50 blend of washed Colombian and Natural Ethiopian beans—and rotating single-origin coffees on drip and espresso. Beyond coffee, the public house side of the business serves local and specialty beers on tap, seltzers, and wine, providing a transition from morning caffeine to evening drinks. The space also serves as a community hub, hosting monthly jazz nights and trivia every third Tuesday of the month.
