Vitek's BBQ is a cornerstone of Waco's culinary scene, operating as a fourth-generation family-owned and operated business. It began in 1915 as Vitek's Grocery and Meat Market, founded by butcher William Martin Vitek in Granger, Texas, before moving to South Waco. The business evolved over decades; in the late 1950s, William Frank 'Willie' Vitek began cooking barbecue on a portable pit, and by 1972, the establishment was officially renamed Vitek's BBQ. The restaurant is most renowned for its signature dish, The Gut Pak, created by Bill Vitek in 1983. This decadent combination of Frito's corn chips, hand-chopped brisket, sausage, beans, pickles, onions, and jalapenos is served with sliced white bread. The dish gained national notoriety, winning first place in The Cooking Channel's 2013 Best College Eats and receiving coverage from ESPN and Texas Monthly. Beyond the food, Vitek's has expanded its community presence. In 2007, the owners added a large dining area with comfortable booths and tables, as well as a biergarten that hosts community events and live music almost every night. The establishment continues to operate on a philosophy of fulfilling special customer requests, a tradition started by the founder, William Martin Vitek.
